Beef Stew:
Ingredients:
600g beef (shank, rump)
500g potatoes
1 onion
1 leek
1 green pepper
1/2 red pepper
2 or 3 carrots
2 garlic cloves
2 bay leaves
1 tablespoon sweet paprika
500ml red wine
650ml water
Salt, black pepper, and EVOO
ZAMPA TIP: If, when you finish the dish, the sauce is too runny and resembles more of a broth than a sauce, you can fix it by dissolving a little flour in oil or butter, then adding a little of the stew broth and returning everything to the pot. Another option would be to mash a couple of cooked potatoes and add them. For another option, you can remove the meat and potatoes if they're tender enough and let the sauce reduce with the vegetables. When it's to your liking, add the meat and potatoes back in. However, if you use the quantities listed in the ingredients list, it should be fine when you finish the recipe.
