Aside from my Ube Macapuno Cake, Mango Cake is also one of the most requested by friends and family during summer. This time I decided to try making my usual Mango Cake into a chiffon cake roll. It turned out really light and nice and refreshing. I hope you try making it and love it as much as I do.

INGREDIENTS:
Chiffon Cake:
1 cup + 2 tbsp cake flour
6 tbsp white sugar (for the flour mixture)
1-1/2 tsp baking powder
1/2 tsp salt
4 eggs, room temperature, separated
6 tbsp white sugar (for the meringue)
1/3 cup water
1/4 cup canola or veg oil
1/2 tsp vanilla extract
1/2 tsp lemon flavour
Mango Cream Frosting:
125g cream cheese
1/4 cup white sugar
1/2 tsp vanilla extract
2 cups thickened cream or whipping cream
1/4 cup slightly mashed mangoes, drained
