Finnish salmon and cream soup, known as "Lohikeitto," is a variation of fish soup, but more sophisticated and quick to prepare. While this may seem controversial, salmon is a common fish for Finns, and they cook it often.
Lohikeitto soup is easy to make: just pour water into a saucepan, boil the potatoes and salmon pieces, add cream, and serve. The whole process takes no more than half an hour, and the enveloping, cozy flavor will captivate you from the first spoonful. To make it simple, we'll use canned salmon.
