In the late 17th century, the British crown tried to put the tax on malted barley going to the Irish distilleries to avoid that tax the distilleries start using unmalted barley as part of their process of making whiskey. This made it a little spicier little creamier, and now a new category a Pot Still Whiskey. One of them is produced by Dingle Distillery
