1. Prep vegetables.
1a. Cut the ends off of the sweet onion and then slice it in half. Store the unused half.
1b. Remove the papery outer layer.
1c. Dice the sweet onion into ¼” pieces.
2. Measure and cut 1 tbsp butter.
3. Measure and cut 4 ounces cream cheese.
4. Heat a large pot at medium high heat.
5. Add 1 tbsp olive oil, 1 tbsp butter, and onions to pot.
6. Cook for 3-5 minutes, until onions become translucent.
7. Add 4 cloves of minced garlic, 1 tsp thyme, and 4 cups (about 12 ounces) sliced mushrooms to the pot.
8. Season with 1 tsp salt and ¼ tsp pepper.
9. Cook for 5-7 minutes, until mushrooms start to brown.
10. Add 1 cup broth and 1 tbsp balsamic vinegar to the pot.
11. Cook for 3-5 minutes or until liquid has reduced by 1/3.
12. Add 2 tbsp cornstarch to the pot and mix until all powder is combined.
13. Add 4 cups broth and 1 whole bay leaf to the pot.
14. Bring to a boil and then reduce heat.
15. Simmer for 20 minutes, stirring occasionally.
16. Add 4 ounces cream cheese and 1 tsp soy sauce to the pot and stir until slightly broken up and melting.
17. Remove bay leaf from pot.
18. Add 1 tsp salt.
19. Blend (emulsion or standard) soup until desired smoothness is reached.
20. Combine 1 tbsp plain yogurt and 1 tbsp water, mix until smooth.
21. Ladle soup into bowls.
22. Drizzle thinned plain yogurt and sprinkle chives on top of soup to taste.
