Simple, Easy and Delicious Cola Cake

You will need:

For the cake
2 cups sugar
2 cups all-purpose flour
1 teaspoon baking soda
1 cup butter, cubed
1 cup cola – whatever kind you like! We used BC Raspberry Coke a Cola!
3 tablespoons baking cocoa
2 large eggs
1/2 cup buttermilk (if you don’t have buttermilk, you can make it by adding ½ tb of vinegar to the milk, and wait 5 minutes)

Preheat oven to 350° and line bottoms of 2 greased 9” round baking pans with parchment - grease paper
1.In a large bowl, sugar, flour and baking soda.
2.In a small saucepan, combine the cola, butter and cocoa; bring to just a boil, stirring occasionally. Add this to flour mixture, stirring until just moistened.
3.In a small bowl, whisk buttermilk, eggs and vanilla until combined, then add to flour mixture, whisking constantly.
4.Pour evenly into the prepared pans
5.Bake 25-30 minutes - until a toothpick inserted in center comes out clean.
6.Once baked, cool pans for 10 minutes, then turn them out on to wire racks to cool totally before icing


For the icing
½ cup (1 stick) unsalted butter softened
8 oz of brick cream cheese, softened
1 teaspoon vanilla extract
¼ teaspoon salt
4 cups powdered sugar
2 tbs of the cola you used for the cake
Food colouring, if you like

1.Combine butter and cream cheese on your mixer and beat until it is creamy
2.Add the vanilla extract and salt, then stir well to combine
3.With the mixer on low, gradually add in the powdered sugar, until it is combined

Once cakes are cooled:

Place 1 cake layer the serving plate and spread the top with about 1 cup frosting.
Top with remaining cake layer, and spread with remaining frosting.
Decorate as you like – we used ground oreo and strawberries.
