Happy Monday... is that a thing? Well, it is the start of my Birthday week so I guess let's make it a thing. I am going to start this week off with a fun little Puerto Rican recipe that is perfect for all your upcoming BBQs. We are making some Yuca en Escabeche! This is a fun little recipe that is a cool sub for Potato Salad that you will totally fall in love with.
