For quantitative research, empirical research, experimental research the data should be in the number form.
Generally, researcher collect data through questionnaire and survey. Generally, data is collected through questionnaire either via online mode (Google form or via other online mode) or offline mode. In questionnaire various variables/items/questions usually happen yo be in qualitative form, such as Gender - male or female; Education - UG, PG, Ph.D, etc.; Occupation - Salaried, Professional, Businessman, Housewife, etc.
So all these are categories of variable and these are in qualitative form so for analyzing data with these categories researchers need to convert/code them in numbers. So, in this video I explained how easily data can be coded in excel.
