How to make drip coffee with a cloth filter. I fell in love with this method after visiting Kissaten's (traditional coffee shops) in Japan.
The coffee always tastes silky smooth, rich and so delicious.
The Method:
PREPARATION
Place your cloth filter inside your coffee server
Pour hot water into the cloth to warm up the cloth and the server (NO COFFEE)
Pour away the water in the server (Easy to forget this trust me)
Weigh out 15g of coffee (Same grind size as a V60 or ask your coffee shop to grind the beans to 'filter' size) and put inside the coffee cloth filter carefully with a teaspoon
*NOTE if you do not have scales, 15g is roughly x6 teaspoons of ground coffee
Heat water to around 92 degrees (if you don't have a temperature assisted kettle like me, use a temperature rod as you'd use to check if chicken is cooked)
POURS
Set your scales to 0
Pour 45g of water over the ground coffee
After 30 seconds (at 0.30) pour 45g more to 90g total
After 30 seconds (at 0.60) pour 45g more to 135g total
After 30 seconds (at 1.30) pour 45g more to 180g total
After 30 seconds (at 2.00) pour 45g more to 225g total
Brew time should finish around 2.20-2.30mins
Pour the coffee into your mug and enjoy!
CLEANING THE CLOTH FILTER
Remove the used coffee grounds into your bin
Rinse the cloth thoroughly with cold water using your fingers to remove coffee DON'T WORRY ABOUT COFFEE STAINS :)
If you're using the cloth filter tomorrow, place in cold water in a mug and put inside the fridge
If you're using the cloth filter later, place in a sandwich plastic bag and put in the freezer (defrost with warm water when you're ready to use it next time)
