Full recipe:
flour 450 gr.
butter 200 gr.
sugar 100 gr.
honey 100 gr.
chicken egg 2 pcs.
soda 1 tsp
ground dry ginger 1 tsp.
ground cinnamon 1 tsp
allspice 0.5 tsp.
For glaze:
egg white 1 pc. (or 2 tbsp water/milk)
powdered sugar 150 gr.
lemon juice couple of drops
dye red and green

Cooking:
Pour sugar into a saucepan and add honey. Turn on the fire to a low level and, stirring, wait until the sugar is completely dissolved. Then, on low heat, when the mass boiled, it must be constantly stirred and cooked until the color of light caramel. Next, add the butter and dissolve completely. Add soda and constantly stir the mass. She will immediately begin to foam and rise. Stirring constantly, bring the mass to the color of caramel. Turn off the heat and add the ginger, cinnamon and allspice. Mix everything thoroughly and leave to cool to room temperature. When the mass has cooled down, it is necessary to introduce chicken eggs into it, but one at a time and bring the mass to uniformity.
Next, right in the same pan, we introduce the sifted flour, but in portions. Bringing the dough to the desired consistency. The result is an elastic soft dough. We leave it to cool in the cold for 30 minutes.
During this time, you can prepare the glaze. Mix the egg white (water or milk) with powdered sugar and, whisking with a mixer, bring to a thick and white state. Add a couple of drops of lemon and mix everything again. Next, divide the glaze into three parts, one of which will be white and leave it the most. Color the other two parts green and red with food coloring. Place each frosting color in a separate piping bag.
When the dough has cooled, roll it out with a rolling pin on a table lightly sprinkled with flour and cut out the figures with molds. Bake on parchment paper in an oven preheated to 170 degrees for 10 minutes.
We decorate ready-made gingerbread with icing to your taste and imagination.
