UPDATE: It turns out that you CAN use this method even without an Oculus account. You'll have to create an unmerged developer account (link below) and then you can proceed with instructions as laid out in the video.
UPDATE 2 (January 2022): I seem to get a lot of "will my Quest 2 get bricked" questions. The honest answer here is that only those working at FB/Oculus/Meta are qualified to answer that. That said, this video has been up since 2020, and the method is still working, in spite of FB being aware of it.
My Quest 2 still works, and if that changes, I figure I can always do a factory reset and sell it to someone who doesn't mind using a FB login (which, by the way, is going away sometime in the future, as FB announced it during the last FB connect).

-Create an unmerged Oculus developer account here: https://developer.oculus.com/sign-up/ (requires verification by phone and/or a payment method)
STEPS:
For this to work you will need an Oculus account that hasn’t been merged with Facebook
1. If you attempted setting up your Quest 2 before, remove the device from your Oculus account
2. (optional) remove all Facebook apps from your mobile device (delete all cache and data prior to hitting uninstall)
3. Restart your mobile device
4. Disable app auto-updates on your phone/tablet
5. Install oculus v36.0.0.5.242.apk
6. Log into your existing Oculus account in app
7. Factory reset Quest 2
8. Go through the in-headset setup process
9. Add your new headset in the phone app (select Quest 1) and let the connection fail
10. Put the headset on and follow all instructions for setting up Wifi inside the headset (watch all safety videos, wait for the updates to complete, etc)
11. Once finished, the headset should reboot
12. Go back to the app and try to pair the headset again (once again, select Quest 1)
13. Turn on dev mode right away (available to developer account holders - get yours here: https://dashboard.oculus.com/organiza...)
