Pine nuts are the general term for the seeds of several species of plants in the genus Pinus, known as cedar pines, which produce edible seeds. In Russia, the term "pine nuts" most often refers to the seeds of the Siberian pine (Pinus sibirica). Pine nuts are small, pale yellow kernels with a vibrant flavor, almost always sold shelled. The piquant flavor of pine nuts intensifies when roasted, when they begin to release oil. The vast Siberian expanses are considered the birthplace of the cedar, where these majestic trees, some up to 3,000 years old, still grow.
