RECIPE
INGREDIENTS
6 English Muffins
8 cage Free Eggs
1 1/2 cups whole milk
1 1/2 cups sharp cheddar cheese, shredded
8 oz breakfast sausage
4 strips smoked bacon
1/2 large red onion
2 medium jalapeños
salt and pepper
extra virgin olive oil
RECIPE INSTRUCTIONS
1. Chop jalapeños, onions, sausage and bacon. Set aside.
2. Roughly chop english muffins and put in a large bowl and set aside.
3. In a medium pan over medium-low heat, sauté sausage and bacon in 1tsp olive oil until browned on all sides and almost fully cooked about 6-8 minutes.
4. Add in veggies the last few minutes and cook until soft and fragrant. Fully incorporate in to sausage and bacon mixture. Set mixture aside.
5. Lightly grease a 9 x 13 pan with 1 tsp olive oil and place half of the english muffin bread crumbs evenly in the bottom. Spread half the sausage mixture on top of the bread crumbs and sprinkle with 3/4 cup cheese. Repeat with english muffins, sausage mixture and cheese one more time.
6. Whisk eggs in a large bowl until fully combined. Add in milk and whisk for a few more minutes. Season with salt and pepper.
7. Pour egg/milk mixture overtop of your casserole. Evenly distributing all of it.
8. Cover with plastic wrap and refrigerate at least one hour. I refrigerated mine overnight.
9. Remove plastic wrap and bake 40-45 minutes at 350 degrees Fahrenheit.
10. If casserole is still runny in the middle (check with a toothpick) bake for another 5-10 minutes.
11. Let cool for a few minutes, serve and enjoy!
