Welcome to a very special episode of Rural Cuisine! You have been asking for it, and today it finally happens. Tela, the Daral's channel operator behind the camera, joins Leila for a beautiful day of outdoor cooking!
In this memorable video, Tela and Leila team up to cook one of the most beloved Persian dishes: Kabab Tabei (Iranian Pan Kebab) served with Zereshk Polo Zaferoni (Saffron Barberry Rice), all cooked over a crackling wood fire.
The Cooking Process:
Leila and Tela start by mixing fresh ground meat with grated onions, turmeric, black pepper, and salt. They spread the meat mixture perfectly into a traditional pan and let it cook slowly over the wood fire, adding fresh tomatoes for that amazing rich flavor.
To complete this feast, they prepared fluffy Persian rice topped with butter-fried barberries (Zereshk) and golden saffron. The smoky flavor of the firewood makes this Kabab Tabei an unforgettable meal.
