CHICKEN PIERRE
• 2 lbs boneless, skinless chicken breasts
• ¼ cup flour
• 1 tsp salt, divided
• pepper
• 3 Tbsps olive oil
• 14.5 oz can stewed tomatoes
• 1/2 cup water
• 2 Tbsps brown sugar
• 2 Tbsps white vinegar
• 2 Tbsps Worcestershire sauce
• 2 tsps chili powder
• 1 tsp ground mustard
• ½ tsp celery seed
• 1 clove garlic, minced
• ⅛ tsp hot pepper sauce
• 2 (12 oz) pkgs frozen zucchini spirals
1. In a shallow dish or bowl, combine flour, ½ teaspoon salt and a pinch of ground black pepper. Coat chicken breasts with flour mixture.
2. Heat olive oil in a large skillet over medium heat. Add chicken, and brown on all sides. Remove from skillet, and drain on paper towels.
3. In the same skillet, combine tomatoes, ½ cup water, brown sugar, vinegar and Worcestershire sauce. Add remaining 1/2 teaspoon salt, chili powder, mustard, celery seed, garlic and hot pepper sauce. Bring to a boil; reduce heat, and return chicken to skillet. Cover and simmer 35-40 minutes, or until chicken is tender and juices run clear.
4. Prepare zucchini spirals according to package directions. Serve chicken over zucchini spirals.
