Real Borodinsky bread baked in the oven
A simple recipe anyone can make.
Pour 15 ml of coriander and 45 ml of rye malt into a mug and add 100 ml of boiling water. Set aside.
Pour 290 ml of water into a mixer bowl.
Rye flour 320 g
Wheat flour 160 g
Salt 7 ml
Sugar 2 tbsp
Sunflower oil 2 tbsp (optional)
8 ml yeast
Knead the dough; I used a CARRERA #657 food processor.
Grease a baking pan with sunflower oil.
Pour the dough into the pan with wet hands.
Let the dough rise at 40 degrees Celsius (104 degrees Fahrenheit) for an hour and a half.
Bake for 1 hour at 180 degrees Celsius (350 degrees Fahrenheit).
