Aubergine fry
Ingredients
2 tbsp cooking oil
1/2 tbsp peanut
1 chopped onion
4 garlic cloves
1 chopped tomato
1/2 tbsp mustard seed
1/2 tbsp cumin seed
1/2 tbsp whole pepper
2 dry chilli
8-10 curry leaves
1/2 kg sliced aubergine as required
2 tbsp salt
1/2 tbsp turmeric powder
1/2 tbsp paprika
1/2 tbsp pepper powder
1/2 tbsp coriander powder
1/2 tbsp cumin powder
1/2 tbsp coriander powder
coriander as required
Method
Rinse and slice 500g of aubergine into long slices. Add oil to the hot pan and add some cumin,whole pepper and mustard seeds. For crunchy feel add some peanut to the pan.add 4 garlic and finely sliced onion and salt .Fry till it turns brown and add tomato for some flavour to catch in and add in the aubergine to the pan.
Fry till it turns golden brown and add all the spices like turmeric,coriander,cumin,garam masala and pepper powder to the aubergine.
Sprinkle some water to cook the spices and finish of with the coriander.
