Hello everyone, here's the list of ingredients along with the steps to make egyptian kushari:
Ingredients to make egyptian kushari:
egyptian rice
macaroni
spaghetti
capellini
brown lentils
three chopped tomatoes
salt
pepper
minced garlic
tomato paste
three chopped onions
vinegar
oil
pepper
chickpeas
hot peppers
red chili powder
onions
flour
ground coriander
Steps to make the kushari:
1) add some oil in a pan
2) add two spoonfuls of flour in a bowl filled with three chopped onions and pour them into the pan. Cook until it’s golden and put it on a sheet of paper towel to soak up the oil. Keep the oil that you used for the onions
3) in two separate pots, add water, a spoonful of the onion oil, cumin and salt.
4) in one of the pots, add one cup of spaghetti and one cup of macaroni until it’s cooked. Drain it and put it in a bowl, add a little bit of oil to make sure it doesn’t stick.
5) in the other pot, add one cup of brown lentil and let it cook partially and drain in a bowl. Preserve the water used.
6) in the same pot that we cooked the onions in, add half a cup of capellini and let it cook until it’s golden. Add two cups of rice and mix it together for a few minutes. Add four cups of the water where the brown lentils were cooking to give it flavor. Add one spoonful of cumin, salt and a pinch of pepper. Let it cook.
7) once the rice is boiling, add the brown lentils and mix it all together and let it cook.
How to make the kushari sauce:
1) blend the three chopped tomatoes until they’re liquid
2) in a pot, add the onion oil, one spoonful of minced garlic, the tomato liquid, one small can of tomato paste, one spoonful of cumin and one spoonful of salt and mix it all together until it’s hot.
How to make da’a sauce:
1) in a bowl, add one spoonful of minced garlic, cumin, salt, half a cup of vinegar , half a cup of water and a spoonful of the onion oil. Mix it all together and let it rest
How to make the hot sauce:
1) chop small hot peppers and add them in a bowl, add one spoonful of pepper and 2 scoops of the kushari sauce.
How to assemble the kushari:
1) first layer: the rice mixed with brown lentils and cappellini
2) second layer: the macaroni and spaghetti
3) third layer: the tomato sauce
4) add chickpeas on the top
5) add caramelized onions on top
6) add some hot sauce or the da’a, as preferred
