Firefox profiles are multiple instances of Firefox that use different settings, bookmarks, extensions etc and keep there data separate from each other. You could install another browser, use a virtual machine or another user account to achieve the same net result however profiles allow you to avoid all those inconveniences.
All your security settings, extensions, bookmarks, themes, logins/accounts, cookies and data are separated, great for finance sites, privacy, work vs home situations or when you have different/multiple accounts on the same sites. You can import your existing profile from another Linux installation and avoid having to reconfigure Firefox on a new installation. Not sure if you can import from a Windows or Mac version of Firefox to a Linux version, I somehow doubt its possible but have never tried it.
As usual you do this at your own risk. I'm no expert on these matters although I've been importing my profiles from existing Firefox installs into my new fresh (Linux) system installs and have now started to use separate profiles for other Internet activities as shown in the video.
