Another day, another TikTok food hack/trend. This time, instant ramen noodles get made over with pantry ingredients you likely already have. Ditch the spice packet that comes with your instant ramen (or just purchase plain dried ramen-like noodles) and gather what you need: butter; garlic; dried red pepper or chili flakes; soy sauce; brown sugar; and an egg. I've seen that the original calls for Trader Joe's Everything But the Bagel Seasoning Blend, but I didn't have any on hand so I used furikake instead. The scallions and furikake are optional, but highly recommended. Don't forget to save a couple of tablespoons of the cooking water to add to the sauce! As with any recipe, adjust the seasonings up/down according to your tastes. If I were to make this again, I would decrease the sugar amount just a touch (I wouldn't eliminate it completely, as it adds a nice teriyaki flair) and add another egg. :)

Viral TikTok Ramen
1 package instant ramen noodles without packet (I used 2 small noodle bundles, which yielded a bit more than a standard package)
2 to 3 tablespoons unsalted butter, plus a bit more for the egg
1 to 2 cloves garlic, minced
1/4 teaspoon dried red pepper flakes
1 to 2 tablespoons soy sauce
1 teaspoon brown sugar
1 to 2 tablespoons noodle cooking water
1 egg
1/2 scallion, to garnish
Furikake, to garnish
Cook noodles in boiling water. When it is 30 to 60 seconds from being done, reserve a few tablespoons of cooking water and drain the noodles. Set aside.
In a small to medium pan over medium low heat, melt the butter. When it starts to foam, add the garlic and combine. Add the dried red pepper flakes, soy sauce, and sugar. Mix until sugar is dissolved.
Add the drained noodles to the pan and set it to the side (this will crisp up some of the bottom of the noodles). Add 1/2 to 1 tablespoon of butter. When melted, add your egg. Let the egg white set for a few seconds before mixing with the noodles.
Plate the noodles and garnish with scallions and furikake.
