Ingredients

For the boxty:
250g(1cup) mashed potato
250g (1 cup)peeled, grated, raw rooster potato
250g(2 cups) plain flour
1 tsp baking soda
100 ml buttermilk
1 egg
6 spring onions, finely sliced (optional)
250 g(1 cup) cubed(Grated) Irish cheddar cheese,
sea salt and ground black pepper
Butter, to fry


Instructions
1. Squeeze out excess moisture from grated potatoes.
2. Add all ingredients to a mixing bowl and combine well
3. Heat a pan or skillet with the butter (Medium heat), and scoop out the mixture into the pan when the butter is melted.
4. Fry for 10 minutes on either side until golden brown and crispy.
5.If the butter starts smoking turn the heat down to avoid burning.
Butter should be sizzling not smoking.
