It doesn't matter whether you pasteurize or sterilize the coconut; it will work either way.
Mushroom spores generally don't germinate on coconut, whether they're fungal spores or mold.
The quality of coconut fiber generally depends on the brand and its intended use.
Most blocks of coconut fiber for reptiles can be used straight out of the box; simply pasteurize them using this method and grow your mushrooms.
