Oh, rhubarb, I adore you! I feel like many people assume that rhubarb is a one trick pony- the quintessential rhubarb tart for spring, but I LOVE how versatile it is! It is one of my favorite seasonal flavors.
Rhubarb Syrup:
4 Cups Rhubarb, chopped
1 Cup Sugar
1 Cup Water
Add all ingredients into a saucepan and bring to a boil, then lower heat to a simmer for about 30 minutes or until the syrup has started to thicken. Strain the rhubarb through a fine mesh sieve and let cool completely before use!
For this quick spring sip, I added about a half an ounce of rhubarb syrup into an iced glass, added a sprig of thyme and topped with sparkling water! But there are so many fun flavor combinations!
