Burrito meal prep again! This time I will be making shredded beef burritos along with some mexican rice.

Shredded Beef Recipe (Instant Pot Pressure cooker)
Spice mix
1 tbsp paprika
1 tbsp dried oregano
1 tsp All Spice powder (ground All Spice)
1 tsp coriander powder
2 tsp onion powder or garlic powder OR 1 tsp of each
1 tsp salt and pepper , each
Beef
1 – 2 tbsp olive oil
3 lb / 1.5kg beef chuck or brisket (or gravy or any other slow cooking beef) cut into 4 pieces
5 garlic cloves, minced
1 onion , diced (yellow, brown or white)
2 tbsp lime juice
14 oz / 400g can tomatoes
2 cups (500 ml) beef or chicken broth/stock
1/2 cup (125ml) water
Salt and pepper
1) Cut the beef into chunks
2) mix up the spice and use it on the beef
3) add olive oil (or honestly you can use other oils) into the instant pot and turn on Saute mode to brown the beef
4) add garlic and onion a cook for another min
5) add lime juice (if you have any orange juice try adding 3/4 cup of it here)
6) add tomato, chicken stock/broth or beef or veggie
7) Cook on high pressure for 50 min
8) Remove beef and shred with 2 forks
Mexican Red Rice (Rice Cooker)
1 small onion, diced
3 cloves garlic, minced
1 cup white rice
2 cups vegetable broth
1 can diced tomatoes with liquid (10 ounce can)
1/4 teaspoon salt (or to taste depending on broth)
Wash the rice first then add everything in the rice cooker seeing how the water level is from the diced tomatoes and if needed add a bit more chicken broth or water. Cook in the rice cooker as normal
