It's time to skim the white wine from its sediment. The process itself is simple and straightforward: drain the wine from the sediment using a hose. The wine is still cloudy, of course, but we don't need what's left at the bottom; it contains a lot of dead yeast and a lot of sedimented pulp. I always skim dry wines after two weeks to prevent the sediment's flavor from ruining the wine. Be sure to taste it.
