In this recipe, I'll show you how to easily make your own yogurt with just two ingredients: milk and yogurt (or yogurt starter). The milk (whether fresh, from a farmer, or UHT) is heated to about 95°C (203°F) to kill any potential germs and allow the proteins to change. This is how the yogurt will later form. Once cooled to about 50°C (122°F), the yogurt is stirred into the milk. Now the preparation is complete. The milk mixture needs to rest in a warm place for about 4-6 hours (depending on the container, up to 12 hours). This allows the yogurt cultures to develop optimally. This can be done in the oven, a dehydrator, or simply wrapped in a warm cloth near a radiator. You can use this cultured yogurt to make more yogurt again and again.
