Purple Sweet Potato (Ube) Pie Recipe
1 graham cracker crust
1.5 cups of purple sweet potato cooked and mashed
1 8oz brick of cream cheese, softened
1 cup of sugar
1/4 tsp of salt
1 egg plus 2 egg yolks beaten
1/2 cup of heavy cream
1/4 cup of melted butter
1/2 tsp cinnamon
1 cup of baby marshmallows
• Pre-heat oven to 400 degrees
• Combine sweet potatoes, cream cheese, sugar, salt, cinnamon until mixed
• Add eggs, heavy cream, melted butter, mix thoroughly
• Pour mixture into graham cracker crust and bake for 40 minutes or until darkening
• Add marshmallows and cook for an additional 5 minutes
