All offline data is encrypted with VeraCrypt. Due to the open-source nature of this software, we can verify that no backdoors have been written into the code base because we can audit it internally line by line from this repo. This is not possible with closed-source encryption software.
Even with this software we back up data in the most secure way possible. We do this by hiding the main volume within the backup disk. We assume that an adversary will access the encrypted hard drive. Even if it is in a bank safe deposit box. For that reason, we always encrypt the volume with a cascade of three ciphers. Such as AES (Twofish(Serpent)).
We choose a recipe of ciphers that no single spy agency or team is likely to break with cryptanalysis. A Hash Algorithm of SHA-512 or equivalent is a good idea.
The password for decrypting the hidden volume should be set to the max of 128 characters, with the normal companions of all characters. This password along with the password should be stored in a reputable password manager such as KeePassXC.
