This classic gin drink is a tangy citrus-led cocktail made using fresh lemon juice, with dry herbaceous notes from the gin and a floral orangey sweetness from the triple sec. Whilst its origins are murky its fame and reverence as a classic cocktail is largely unmatched. Follow along with us to learn how to make this renowned drink at home.

INGREDIENTS:
-40ml Gin
-20ml Triple Sec
-20ml Lemon Juice
-10ml Sugar Syrup
-1 Egg White
-Lemon Twist to Garnish

EQUIPMENT:
-Shaker
-Jigger/Measure
-Hawthorne Strainer
-Fine Mesh Strainer
-Elbow Press

METHOD:
1) Chill a Martini Glass/Coupette in the freezer or fill it with ice.
2) Using your jigger to measure, add the gin, triple sec, lemon juice and sugar syrup to your boston glass, small tin or shaker.
3) Take your large tin/Boston tin and crack an egg on the rim, use the shell to separate the white from the yolk, add the white to the shaker and discard the yolk. If any shell or yolk gets in the shaker, discard and try again.
4) Add the egg white to the rest of the ingredients.
5) Fill your shaker with cubed ice, seal and shake vigorously for 10-15 seconds.
6) Using your hawthorne strainer, strain the drink from one side of your shaker to the other and discard the ice.
7) Re-seal your shaker and shake for a further 10 seconds without any ice to help aerate the egg white.
8) Using your fine mesh strainer, strain the drink into your chilled martini glass or coupette.
9) Garnish with a lemon twist.
10) Serve and Enjoy!


TRIVIA:
The White Lady appears, albeit a little differently, in Harry Craddock’s seminal Savoy Cocktail Book though its origins may go back even further.

This was apparently the drink of choice for comedy duo Laurel and Hardy and-it’s rumoured that it was also a particular favourite of literary muse Zelda Fitzgerald and that it takes its name from her distinctive white hair.
