Is it safe to eat rhubarb? Rhubarb stalks are vibrant tart and taste great when cooked with sugar, into a homemade pie or cobbler. The leaves however contain levels of oxalic acid a corrosive that can lead to kidney failure and even death. Even the toxic leaves may be treated to remove the oxalic acid and this is used in flavoring extracts.
