INGREDIENTS:
For the test:
Cottage cheese - 220 grams;
Chicken eggs - 3 pieces;
Butter - 125 grams;
Sugar - 200 grams;
Flour - 245 grams;
Vegetable oil - 25 grams;
Baking powder dough - 15 grams;
Vanilla sugar - 0.5 grams;
Salt - 1 gram;
Dried cherries - 50 grams;
Orange zest - 1 piece.
For glaze:
Milk chocolate - 80 grams;
Vegetable oil - 20 grams.
For decor:
Dried cherries;
Confectionery chocolate chips.
COOKING:
1. Pour baking powder into the sifted flour, mix with a whisk.
2. Grind cottage cheese with chicken eggs, salt and vanilla sugar with an immersion blender.
3. Beat butter at room temperature with sugar with a mixer. Pour sugar in portions.
4. Put the curd mixture into the whipped butter with sugar. Beat everything at medium speed of the mixer until an air mass is obtained.
5. Pour flour with baking powder into the resulting mass, add orange zest and mix well with a mixer.
6. Wash dried cherries with hot water and pat dry with paper towels, sprinkle with flour and stir.
7. Add cherries and vegetable oil to the dough, mix everything well with a spatula so that the berries and butter are distributed throughout the dough.
8. Cover the bottom and sides with parchment with a form of 20 centimeters in diameter.
9. Place prepared dough and smooth with a spatula.
10. Bake in a preheated oven to 165 degrees for 40-45 minutes. Adjust the baking time according to your oven. The cake should increase in volume and brown.
11. Remove the prepared cake from the mold and let it cool completely on the wire rack.
12. Melt the chocolate pieces in the microwave. Pour in vegetable oil and mix well. Pour over the cooled cake and decorate as you wish and taste.
