Previously, we harvested black caviar from beluga sturgeon after killing the fish. But this fish is extremely rare, and it takes 15 years for it to mature and produce high-quality caviar. Therefore, scientists developed a "no-kill" method that first uses ultrasound to determine the roe's readiness and quality, then extracts it with gentle pressure.
Traditional black caviar is produced by sturgeon, beluga, stellate sturgeon, and ship sturgeon. The world record belongs to a beluga that weighed 2,520 pounds and produced 900 pounds of caviar. Today, that would be worth around half a million dollars.
