Crispy Fish Vinaigrette…the ultimate summer fish dish! This is the second fish recipe I’ve tried from Laura Calder’s cookbook, French Food At Home. Years ago, I enjoyed watching her on the Cooking Channel and wanted to begin making some recipes from her cookbook.
Crispy Vinaigrette Fish (from French Food At Home, Laura Calder)
(serves 2)
2 to 4 red snapper or other fillets, i used salmon (about ¼ pound/125 g per person)
Salt and pepper
3 tablespoons olive oil
About 20 cherry tomatoes, each pierced once with a knife 2 handfuls arugula
1 tablespoon unsalted butter
About 2 teaspoons balsamic vinegar
Season the fish with salt and pepper and set aside. Heat a tablespoon of the olive oil in a skillet and throw in the cherry tomatoes. Toss until hot and splitting, about a minute. Throw the arugula into the pan for just a few seconds to warm.
Arrange the tomatoes and arugula on warm plates.
Melt the butter with another tablespoon of the oil in the pan. Fry the fish on both sides until tender and flaky. Transfer to the plates. Deglaze the pan with the vinegar and boil a few seconds to reduce. Pour in the remaining tablespoon of oil and swirl around, then pour it over the fish, arugula, and tomatoes. Grind pepper over, sprinkle with salt, and serve.
