Professions in Cataclysm offer a bit more freedom than previous expansions, but with that said, there are still a few that stick out when it comes to player power.
Engineering, Jewelcrafting, Blacksmithing, and tailoring, the usual suspects, still reign supreme-- but the gap between these professions and other professions you may want to run for gold purposes, like alchemy, is much smaller and definitely viable options even for sweaty raiders.
This is geared towards playing optimally and getting the most out of your character, but that doesn't mean you need to optimize everything you do in the game. Play as you wish.
