If you have a sweet tooth or love desserts, you'll surely love this recipe. It's an easy-to-make dairy cheesecake, and the result is a delight for your palate.

For the caramel, we'll use:
• 1/2 cup of sugar
• 1/4 cup of water
For the dairy cheesecake:
• 4 eggs
• 1 cup of sugar
• 1 can (410 g) of evaporated milk
• 1 tsp. of vanilla extract
• And 1 tbsp. of rum
Let's begin!
First, we'll prepare the caramel.
In a saucepan, add a little water, sugar, and the juice of half a lemon. Stir the mixture until the sugar is completely dissolved and the caramel reaches its desired color. Remember not to leave it on the heat for too long.
Pour the caramel into a mold until it covers the entire surface.
To prepare the dairy cheesecake, blend the 4 eggs, sugar, evaporated milk, and vanilla extract.
We take a small amount of the mixture into a bowl, add a little rum, and blend it again.
Finally, we pour the mixture into the mold and place the cheesecake inside a larger pan filled halfway with water.
This will cook the cheesecake in a water bath.
Bake for approximately one hour.
When the cheesecake is ready, remove it from the oven and let it rest for about 20 minutes.
Then, heat it over low heat for a few seconds until the caramel starts to pull away from the sides of the mold.
Carefully unmold the cheesecake onto a plate and refrigerate it for 2 hours to cool completely.
