Velocity sensitivity can be very important when using a synth. It helps me connect to the actual synth beyond just a plugin in my computer.
With certain sounds like basses and certain leads, you may not want a velocity sensitive sound. But some sounds like plucks or pads just sound lifeless when every key press is the exact same.
Serum gives you a fairly easy way to modulate destinations that might help make a sound more expressive via the Velocity macro.
