Calibration of your GPS Simple Tracker from Apogee Components is necessary so that your tracker knows for certain which direction is north. It should be done once a day, before you launch your first rocket.
This is the longer version that goes into the theory of calibration, and why it needs to be pointed in the direction of the earth's magnetic flux.
