1 oz dark rum
1 oz overproof rum
3/4 oz pineapple shrub syrup*
1/2 oz orange juice
1/2 oz cream of coconut
1/2 oz pineapple juice
Shake dry (no ice)
Serve over crushed ice
Add nutmeg and pineapple garnish
*PINEAPPLE SHRUB SYRUP RECIPE
3 cups chopped pineapple
1/4 cup pineapple juice
1 1/2 cup brown sugar
1 cup water
several scrapes/dashes nutmeg
1/2 cup white wine vinegar
1/4 cup overproof rum
Bring all ingredients except vinegar and overproof rum to a boil and simmer for 30 min.
Remove from heat and add vinegar and overproof rum.
Chill overnight, then strain and refrigerate.
Makes ~ 16 oz
