Weeknight dinner with friends. Kick-off summer session 🙌🏽✨
New episode of what I cook when I have guests. You all loved the menu I prepared this winter for my friends, so here's a new menu idea and how I managed to survive the ordeal – yes, it was another weeknight dinner 🙃.
Since Tess is gluten intolerant, I made a 100% gluten-free menu. This not only prevented her from feeling disappointed if there were things she couldn't try, but it also helped me a lot in avoiding cross-contamination (something extremely important, but if you're not used to cooking for someone with celiac disease or gluten intolerance, like me, it's easy to mess things up).
MENU
APPETIZER
Cheeses. This time I went for a truffle brie and sheep's cheese from the Pyrenees with gluten-free crackers. Tip: Take the cheeses out at least 30 minutes beforehand so they're at room temperature when you're ready to eat them, but cut them while they're cold—it'll be easier.
Olives
Canned cockles with a vinegar and paprika dressing (if your guests like it spicy, I use cayenne pepper instead of paprika, as I learned from my mother ☺️).
STARTER
Cream of pea soup with crispy ham; it's especially delicious chilled right now. You could easily prepare it a day or two in advance. Remember, you can find the detailed recipe and video on my website.
MAIN COURSE
Baked salmon with a tomato marinade—I haven't posted the recipe yet, but let me know if you're interested. If there's enough interest, I'll get started 💪🏽.
SIDE DISHES
Roasted potatoes with oregano and paprika, spices I chose with the salmon marinade in mind, so they would complement each other perfectly.
Roasted zucchini. You know a touch of green is essential for me, and the great thing about roasted vegetables is that you can prepare them in advance, in large quantities, and then reheat them before serving. Choose one that's in season, and you're all set.
DESSERT
