Carrot Oat Groat Risotto
Ingredients
2 TBSP extra virgin olive oil
1 onion, diced
1 clove garlic, minced
2 tsp salt
1 tsp black pepper
1 tsp dried thyme
1 1/3 C whole oat groats
5 C carrot juice
1 TBSP white wine vinegar
For serving: Feta Cheese, Parsley, Roasted Hazelnuts
Instructions
In a medium sauce pan, heat oil over medium heat. Add onion, garlic, salt, pepper and thyme. Reduce heat to medium low and cook until onions are soft, translucent, and fragrant, about 5 mins. While the onions and garlic and cooking, add the dry oat groats to a small sauce pan on low heat and toast them, stirring frequently.
Add the oat groats to the onions and garlic and increase the heat to medium. Cook for 1 min. Add 2 cups of carrot juice and cook, stirring often, until liquid is almost fully absorbed. Add another 2 cups of carrot juice and repeat last step. It will take 10-15 minutes for each 2 cups to be absorbed by the oats. Add the final cup of carrot juice and stir well. (start cooking the salmon at this point). Once the last cup of carrot juice is absorbed, and your oats are creamy, stir in the white wine vinegar. Serve with cheese, nuts, and herbs - enjoy!

Pan Seared Salmon Fillet
Ingredients
Salmon fillets
Olive Oil
Salt
Paprika
Cajon seasoning
Onion Powder
Instructions
Heat a non-stick skillet over medium high heat. Add olive oil and brush around the pan to fully cover. Season the salmon and place them skin side down in the skillet. Wait until you see the light pink color change nearly half-way through the fillets before flipping (about 2-3 mins). Cook the other side for an additional 2 mins. Serve and enjoy!
