PREVIEW: The Chinese Lever Machine (Jian Yi 简一)
Here's one of the most interesting manual espresso machines I've seen and I had to get a preview out. This is the Jian Yi (简一) lever espresso machine! I go over the machine's features, discuss a bunch of things while the PID heats up, and I pull a shot towards the end of the video. Excuse the late-night mess. The Jian Yi is a manual lever espresso machine that features a PID, a 58mm portafilter, offers large yields, and is incredibly temperature stable. Preheating is optional as you can start with higher temp water to speed up your workflow and because there's a PID you can control the water you add down to .1 Celsius. I'm calling it the Chinese Strietman and while lever purists would argue there isn't craftsmanship here, I'd argue the focus is on performance and simplicity. I've pulled some amazing shots on this machine and I'll be posting a video detailing the full machine in the future.
