INGREDIENTS
1 Cup Beyond Meat Crumbles
½ C. Sm. Diced Zucchini
½ C. Sm. Diced Red Pepper
½ C. Sm. Diced White Onion
9/12 Baby Bella Mushrooms
2 Cloves Minced Garlic
1tsp Black Pepper
1tsp Pink Himalayan Salt
1tsp Garlic Powder
1tsp Onion Powder
Breadcrumbs
1 tbsp Olive oil
INSTRUCTIONS
Wash your hands and produce!
Chop Zucchini, onion and red pepper into a small dice and mince the garlic. Set aside.
Clean mushrooms with a damp paper towel, carefully remove stems from mushrooms.
Preheat oven to 350 degrees F (175 degrees C).
Heat oil in a large skillet over medium heat. Add garlic to the skillet. Saute, be careful not to burn garlic.
Add onion, zucchini and pepper to skillet. Cook until tender.
Add Beyond meat crumbles and stir in spices. (onion powder, garlic powder, salt and pepper). Set aside to cool.
Fill each mushroom cap with a generous amount of stuffing. Arrange mushrooms caps on a baking pan or cooking sheet
Top with breadcrumbs and bake for 20 mins in a preheated oven at 350° F (175°C), or until breadcrumbs are golden brown.
