This issue has had me climbing the walls, but I'm glad to finally have my headset mic working again.
As mentioned in the video, installing drivers listed as "non hardware compatible" doesn't seem ideal to me, but I haven't had any issues so I will be rolling with it for now.
I also tried numerous fixes before this, including.
Ensuring device level and gain are maxed
Uninstalling Realtek drivers and letting them auto-reinstall
Installing a windows 11 repair update (Which replaced Windows.old and made it so I couldnt revert to windows 10.)
Disabling Nahimic services
Ensuring audio enhancement and exclusive control features are disabled on the device
Performing an EC reset
Downloading and running the update tool for the Intel ME FU
Redownloading Realtek Drivers from Manufacturer's website
