For the meat:
4 lb (1.8 kilos) beef chuck steak
5 guajillo peppers
2 anchos peppers (optional)
2 to 4 cloves of garlic
1 onion + 1/2 onion
5 bay leaves
1 teaspoon oregano
1 teaspoon thyme
2 whole cloves
Salt to taste
For the sauce
1 lb (450 g) red tomatoes
1/4 lb (220 g) green tomatillos
10 chiles de árbol peppers
2 bay leaves
1 small 8 oz can of tomato sauce
Pinch pf oregano
1/2 onion
2 cloves of garlic
Salt to taste
To serve tacos or consomé:
Chopped onion
Chopped cilantro
Limes
