Why do some sausages peel easily, while others require you to peel off the skin and meat?
The ease with which the casings of sausages come off largely depends on the production method.

The artificial film on sausages, hot dogs, and frankfurters often comes off without any problem, but this is not surprising, as in most cases, it is ordinary oilcloth or food-grade cellophane.

If the skin sticks, this is usually a quality indicator. This means the casing is natural or as close to it as possible in composition. Why as close as possible? Because it is produced using natural materials.
Previously, all types of sausages were "dressed" in intestines. However, the downsides of this casing include the short shelf life of the finished product, its significantly greater susceptibility to microorganisms, the need for significant time and effort on preliminary preparation, and other details.

It was precisely to avoid these drawbacks that the technology for producing artificial casings was developed. These include collagen or protein, cellulose, and fibrous casings. They are made from certain layers of hide, horns, hooves, and other parts ground into flour. This is the optimal option for modern sausage makers. While offering all the advantages of natural casings, artificial casings are also easy to use, provide longer shelf life for the finished product, and allow the finished product to be shaped into any desired shape.

Synthetic casings are made from polypropylene and polyamide. They contain absolutely no trace of natural ingredients.
The reasons for this may lie in the recipe. Oddly enough, the more lean meat and the less fat in the recipe, the more firmly the protein casing binds to its contents. To prevent this defect, casings are produced with a special anti-adhesive coating applied to the inside.
However, there is another issue: excessively harsh roasting conditions (you want it to be ready sooner!), or improper cooling after cooking (you missed the cold shower!).
