Meet Vegan Chef Emily Hersh from "Hell's Kitchen"!

Our Host Shabnam Islam is here with vegan Chef Emily Hersh, the head chef and culinary director at Pure Grit Barbecue, a vegan and gluten-free restaurant that just opened this year. Chef Emily grew up in Texas eating grilled and smoked food and decided to offer the same flavors to everyone but in compassionate recipes.

Where's The Meat?

The idea was, already having a large customer base as a vegan barbeque restaurant in NYC, why not make it available to even more and go gluten-free? Pure Grit really uses its sly marketing tactics with the simple quote “Where’s the Meat?” on the signs. Rewarding, it really comes as a shock to some patrons how delicious and innovative vegan food really can be – exactly what Pure Grit is all about.

Chef Emily says that vegan and vegetarian food is the reason she went to culinary school and became a chef, to show how delicious it can be and to spread love to the world. She was also a vegan contestant on season 20 of Hell’s Kitchen with Gordon Ramsay and Chef Josie Clemens of Peeled!

Chef Emily moved to NYC in April and opened the restaurant in May, really hitting the ground running with her expansive goals of healing mental health, holistic health, and wellness, and a plant-based community – though small, is rapidly growing.
