Get your ingredients:
This makes a delicious dessert served with great dollops of either whipped cream, thick Greek yogurt, vanilla ice cream, or mascarpone cheese and a generous drizzle of runny honey.
Ingredients
• 350g Pink lady apples peeled cored a thinly sliced.
• 220 g Caster Sugar
• 1/2 teaspoon ground cardamom
• 1/2 teaspoon ground ginger
• 200 g sifted cake flour
• 10 ml baking powder
• 1/4 teaspoon ground cloves
• 3/4 teaspoon ground cinnamon
• 1 teaspoon vanilla extract or essence
• 2 eggs beaten
• 125g melted butter
• 50g chopped almonds
Garnish
Icing sugar for dusting
Extra toasted almond flakes ( optional)
Here's how you make it:
1. Get started by lightly greasing a 20cm round springform cake tin lined with baking paper. Grease the paper as well.
1. preheat the oven to 180°C.
2. In a bowl place the apples, 2 tablespoons of the sugar, cardamom, and ground ginger, toss together, and set aside till needed.
3. In a large mixing bowl mix together
4. the remaining sugar, flour, baking powder, ground cloves, and cinnamon vanilla extract eggs and butter with half of the apples, stir well.
5. Soon the batter into your prepared baking tin, spoon the remaining apples over the top, scatter over the almonds and bake for 60 minutes or until a skewer inserted into the center of the cake comes out clean.
6. Remove from the oven and allow the cake to cool in the tin for 10 minutes before removing to cool completely on a wire cooling rack.
7. Serve with great dollops of either whipped cream, thick Greek yogurt, vanilla ice cream, or mascarpone cheese.
Tip: I love to use Pink Lady apples ecsuse they are sweet and fragrant and beautifully textured and hold their shape.
