I will walk you through the iOS Settings to simply log out (Remove) and the Google Account settings if you want to wipe your data for good.

Method 1 (Remove): How to take the account off your iPhone so it stops syncing Mail, Contacts, and Calendars (Data is safe).
Method 2 (Delete): How to use the "Data & Privacy" menu to permanently delete your Gmail address and emails.

Steps to Remove Account from iPhone (Keep Data Safe):
Open Settings Mail (or Apps Mail).
Tap Accounts.
Select the Gmail account you want to remove.
Tap Delete Account.
Confirm by tapping Delete from My iPhone. (Note: This only removes it from the phone; your emails still exist on the web!)
Steps to Permanently Delete Gmail (Erase Data):
Open the Gmail App and tap your Profile Picture.
Tap Manage your Google Account.
Tap the Data & privacy tab.
Scroll down to "Delete your Google Account".
Follow the prompts to confirm deletion.
