Cook Borscht step by step.
Coldwater - 8-9 cups, meat (better to buy beef with the round bone inside - 1 lb), potatoes - 2 medium or 1 large, cabbage - 1/2 or 1/4 of the head (depending on the size), 1 medium carrot, 1 small beet, 1 small onion, 1/2 sweet pepper (not necessary), tomato sauce - 2 tbs, fresh cilantro, garlic - 1-2 little bits, black ground pepper, salt. A little white vinegar, if you would like.
Put meat in cold water, put to cook, when water is almost boiling, take out foam on the meat broth, let to boil 1 hour, and add peeled and chopped potatoes. Cut the cabbage into small pieces, as I showed in the video, and add in the broth, when potato already boiled about 7 minutes, at the same time put the diced onions, carrots, and the beets. Cut that into small pieces. Reheat in a little vegetable oil -2 tbs on a pan and saute the onions, then add the carrots and beets - fry together for 3-4 minutes, add tomato sauce, simmer for 1-2 minutes. When potato soft, put the vegetables in borsch, add salt and pepper, boil for 2 minutes, dice cup cilantro or dill -add to the pot. Enjoy!

A little white vinegar, if desired.
Place the meat in cold water, bring to a boil. When the water is almost boiling, skim off the foam and add the meat broth. Let it simmer for 1 hour, then add the peeled and diced potatoes. Cut the cabbage into small pieces, as shown in the video, and add to the broth when the potatoes have been boiling for about 7 minutes. Meanwhile, add the diced onion, carrot, and beetroot. Chop into small cubes. Heat a little vegetable oil (2 tablespoons) in a frying pan and fry the onion. Then add the carrots and beets. Fry for 3-4 minutes. Add the tomato sauce and simmer for 1-2 minutes. When the potatoes are tender, add the vegetables to the borscht, season with salt and pepper, and simmer for 2 minutes.
