Let's make OssoBuco!
This dish is prepared from veal shanks, which are cut crosswise into 2-finger-thick slices with the bone in. Veal shank is not a particularly tender meat, but long braising makes it so delicious and tender that you simply can't stop eating it.
A quick and extremely tasty recipe!

Ingredients:
Veal shanks, cut crosswise into 3-4 cm thick pieces — 4 pieces
Flour — 3 tablespoons
Salt and pepper — to taste
Olive oil — 2 tablespoons
Butter — 30 grams

To fry the meat:
Dust the meat with flour and season with salt and pepper, then fry in a pan with olive oil and butter.

Vegetable Sauce:
Onions — 2-3 pieces
Carrot — 1 piece
Celery — 2-3 stalks
Salt — 1 teaspoon
Olive oil — 2 tablespoons
Dry white wine — 200 ml
Water — 400-500 ml
Tomatoes in their own sauce or tomato paste — 200 grams / 3-4 tablespoons

Preparation:
1. Sauté the vegetables (onions, carrots, celery) in olive oil until soft.
2. Add tomatoes and wine, simmer for 5 minutes to allow the alcohol to evaporate.
3. Add the browned meat, pour in water and simmer everything over low heat with the lid on for about 3 hours.

For the gremolata:
Bunch of parsley
Garlic — 3 cloves
Lemon zest — 2 tablespoons
Lemon juice — 1 teaspoon

Preparation of the gremolata:
Finely chop the parsley and garlic and mix with the lemon zest and juice. Sprinkle this mixture over the cooked OssoBuco.

As a side dish:
Puree or one of your favorite side dishes.
